The Easiest French Dip You’ll Ever Make (And the Most Delicious)

There are a handful of recipes in this house that get requested so often that I could probably make them in my sleep. This Crock Pot French Dip is one of them. It started as a “this looks easy and delicious, let’s try it” moment, and it quickly turned into one of Garrett’s absolute favorite dinners. For a kid with strong opinions about food, that says everything.
It’s the best kind of slow cooker recipe, too. You just sear the roast on all sides to lock in the flavor, drop it in the slow cooker, pour everything on top, and walk away. Then you spend the next five to six hours apologizing to your stomach because the smell is incredible and you can’t eat it yet. The boys walk in the door after school and instantly ask if it’s French Dip night because the house gives it away before I even say hello.
When it’s cooked, the roast slices beautifully but also falls apart the second you touch it. Tender, flavorful, juicy. And the au jus makes me feel like a real chef for a minute. There’s something about dipping a sandwich into a little cup of hot broth that just elevates the whole situation.
After the roast is ready you simply split hoagie rolls on a cookie sheet, put on provolone cheese, layer the meat, and let it cook until the cheese is gooey and the rolls are a little crunchy. We all inhale these and of course the boys ask for leftovers for school lunch the next day, complete with a little thermos of au jus. Their friends think it’s the fanciest lunch ever and honestly, I’ll take the win.
This one is a staple in our Family Recipe Book and gets pulled out all the time. It’s easy, it’s delicious, it makes the whole house smell amazing all day, and everyone at the table eats it without negotiation. In this house, that alone earns it a gold medal.
